This is by far the tallest cake I’ve ever put together. Two of my former students, Suni Hollenback and Travis Kautenberg decided to trust me with their wedding cake. After reviewing numerous options for designs, Suni landed on this five-tier presentation that showcased fresh flowers, damask stenciling, and fondant covering. They chose three different flavors for the cakes (carrot, chocolate, vanilla) and each one was available for their guests. I think they were both thrilled, yet surprised by the sheer size of this cake, but I distinctly remember Suni’s last instructions for me– “Think tall rather than wide.” Done.
This is my recent creation which reflected all the simple elegance envisioned by the gorgeous bride, Amy Lochbaum, and her sweet groom, Alan Browning. The cake is three tiers, each a different cake flavor and filling and the icing is an amazing Italian meringue buttercream. Flower details are handmade gumpaste offsetting cascading fondant.
